Oxtail is the tail of any type of beef cattle. The meat is bony and coarse, but highly flavourful. When it's slow-braised, a gelatinous collagen is released that gives it a rich, smooth consistency. Try using oxtail in a stew or soup, or braising it in red wine and serving with watercress.
